Some nights call for something a little more special than the classic G&T – but this cocktail is not for the faint-hearted.

“It really depends on how good you are with spice,” says Josh Solano, senior venue manager at The Royal Hotel, with a laugh. “It’ll definitely wake you up.”

We know that the G&T is a tart palate refresher ideal for when the weather warms, but it can also pack a little heat of its own. The cocktail includes a spiced syrup that you can make at home in minutes – like simple syrup, but with a chilli factor. All you need to do is combine chilli, sugar and water in a pot.

You’ll also be able to find the Japanese bitters pretty easily. Top with Cascade Tonic Water and you’re ready to sip. The sweetness of the tonic water works well with the spice (as do the bubbles in “exciting the mouth”).

Solano says the Hot and Spicy G&T will suit Bloody Mary fans who tend to ask for a little more tabasco and chilli. “They’d be able to handle it easily,” he says. “This is perfect for those adventurous drinkers who just want to try something unique.”

Hot and Spicy G&T
Makes one serve. Approx. 2 standard drinks

60ml gin
5ml spiced syrup
2 dashes Japanese Chili and Lime Bitters
Cascade Tonic Water

Fill a tall glass with ice. Add the gin, syrup and bitters. Top with tonic and stir. Garnish with sansho pepper and green chilli strips.
