Green whiskey? There's no such thing. Except at The Royal Leichhardt, where bartender Tanguy Chiron has created a new concoction that gives Irish whiskey a decidedly Celtic hue.

The Emerald Isle marries the smoke from a peated single malt, with sweet iridescent Japanese melon liqueur and a hint of punchy spice with the addition of Cascade Ginger Beer. “Whiskey and ginger beer are a natural pair,” says Chiron.

Makes 1 serve. Approx. 1.7 standard drinks.

Ingredients:
45ml Connemara Peated Single Malt
15ml Midori
Cascade Ginger Beer
Dehydrated apple

Method:
Combine your Connemara and Midori in an ice-filled mixing glass. Stir until the contents are chilled, then strain into an ice-filled highball glass. Top with Cascade Ginger Beer and garnish with a slice of dehydrated apple.
